The iPad uses a slightly different (older) version of Webshit than desktop Safari, it's possible that it's not implemented in the mobile version.
Desktop Safari does support non-prefixed border radius, though, as of relatively recently.

Well... Compared it to what it looked like in Safari to FF4. Looks exactly the same, so, it was most likely just the version the iPad uses.
